Bitter Gourd Chips (Karele ke Pakode)

Thin bitter gourd slices are dipped in a spiced gram flour batter and deep-fried till crisp. Finished with a tangy sprinkle of amchur and chilli powder for an addictive crunch. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3 medium bitter gourds (karela) sliced thinly and soaked in water with salt and turmeric
  • ½ cup gram flour (besan)
  • Oil for deep-frying
  • 3 teaspoons rice flour
  • Salt to taste 
  • 1 teaspoon dried mango powder
  • 2 teaspoons red chilli powder
  • A pinch of turmeric powder
  • 1½ teaspoons coriander powder
  • 1 teaspoon carom seeds (ajwain)

Method

  1. Heat sufficient oil in a kadai.
  2. Combine gram flour, rice flour, salt, dried mango powder, red chilli powder, turmeric powder, coriander powder and carom seeds in a bowl and mix well. Add water as required and mix well to make a thick batter. Add 1 teaspoon hot oil and mix again.
  3. Add bitter gourd slices, mix well and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  4. Sprinkle dried mango powder and red chilli powder and serve immediately.
