Besan Cheela Burrito

A very Indian snack rolled up into a Mexican favorite! It has all the elements of a burrito and the traditional tortilla is replaced with a soft besan cheela that compliments this dish in a very delicious way. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1½ cups gram flour (besan)
  • 1 cup whole wheat flour (atta) + for dusting
  • ½ tsp dried red chilli flakes
  • Salt to taste
  • ½ tsp turmeric powder
  • 2 tsps oil + for drizzling
  • 1 tsp chopped fresh coriander leaves
  • Fresh romaine lettuce leaves as required
  • Herbed rice as required
  • Baked beans as required
  • Salsa for topping
  • Sour cream for drizzling

Method

  1. Add besan and whole wheat flour in a large bowl. Add dried red chilli flakes, salt, turmeric powder and drizzle 2 tsps oil. Add chopped coriander and ¾ cup water and mix well. Knead to a semi-soft dough. Cover with a damp muslin cloth and set aside for 10 minutes.
  2. Take a portion of the dough and shape it into a ball, slightly flatten it. Dust the work top with whole wheat flour and place the portion of the dough on it and roll into a thin disc.
  3. Heat a non-stick tawa, cook the prepared disc for 1-2 minutes on each side. Drizzle a little oil and cook further for 1 minute on each side. Transfer on a worktop.
  4. Add a few romaine lettuce leaves, add a portion of the herbed rice and add baked beans on top. Top up with salsa and drizzle sour cream. Fold the sides and roll into a burrito.
  5. Cut in half and serve with sour cream and salsa.
