Badami Tangdi

Ingredients 

  • 8 chicken drumsticks
  • 12-14 almonds blanched, peeled and ground to a paste
  • 2 tablespoons green chilli-ginger-garlic paste
  • 1¼ teaspoon crushed black peppercorns 
  • ¾ tablespoon lemon juice
  • Salt to taste
  • 2 tablespoons gram flour (besan)
  • 2 tablespoons mayonnaise
  • ¾ teaspoons garam masala powder
  • ½ teaspoon turmeric powder
  • 1½ teaspoons white pepper powder
  • Lemon wedges to serve
  • Onion rings to serve

Method

  1. Make light incisions on the chicken drumsticks and place them in a mixing bowl. Add green chilli-ginger-garlic paste, crushed black peppercorns, lemon juice and salt and rub onto the chicken drumsticks. Marinate for 20-25 minutes.
  2. For the second marinade, mix together almond paste, gram flour, mayonnaise, garam masala powder, turmeric powder, white pepper powder and salt in another mixing bowl. Add the chicken legs and mix well. Set aside to marinate for 30-40 minutes.
  3. Preheat the air fryer at 200°C. Grease the air fryer basket with oil and set aside.
  4. Place 4 marinated chicken drumsticks in the air fryer basket. Spread some of the remaining marinade over them and cook for 15 minutes. Cook the remaining chicken drumsticks similarly.
  5. Transfer them onto a serving plate and serve hot with lemon wedges and onion rings.
