Ingredients
- Pizza sauce as required
- 1 cup mixed capsicum, triangles
- 6-8 button mushrooms, sliced
- 4 chicken sausages, sliced
- 4 tablespoons sweet corn kernels
- 6-8 black olives, pitted and sliced
- 40 grams mozzarella cheese, cut into small cubes
- Red chilli flakes dried, for sprinkling
- Dried oregano for sprinkling
Dough
- 1½ whole wheat flour (atta) cups + for dusting
- 20 grams fresh yeast
- 1 teaspoon sugar
- 1 teaspoon olive oil + for greasing
- 1 teaspoon salt
Method
- To make pizza dough, put yeast in a bowl, add sugar and ¼ cup warm water, mix well and set aside for 10 minutes to activate.
- Take whole wheat flour in a large bowl, add activated yeast, olive oil, salt and sufficient water, mix well and knead to a soft dough.
- Cover the dough with a damp muslin cloth and set aside for 10-15 minutes to prove.
- Dust flour on a worktop and knock back the proved dough. Take a portion of the dough, shape it like a ball, place it on the worktop and flatten it slightly. Roll the dough into a disc and place it on a greased baking tray. Cover with a damp muslin cloth and set aside for 10 minutes to prove.
- Preheat the oven to 180° C.
- Apply pizza sauce and spread it evenly. Sprinkle a few mixed capsicum triangles, a few mushroom slices, a few chicken sausage slices, 1 tbsp sweetcorn kernels, a few black olive slices and a few mozzarella cheese cubes and place the tray in the oven. Bake for 10-15 minutes. Take it out of the oven and transfer it to a serving dish.
- Sprinkle dried red chilli flakes and dried oregano over the pizza and serve hot.
