Asparagus Curry

Ingredients 

  • 2 asparagus, chopped
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, chopped
  • 1 teaspoon sugar
  • 2 green chillies, chopped
  • 1 teaspoon choppedgarlic
  • 1 teaspoon chopped ginger 
  • Salt to taste
  • 1 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon roasted cumin powder 

Method

  1. Heat one tablespoon oil in a non stick pan add cumin seeds, when it satrts spluttering add asparagus and saute till tender. Remove from flame and keep it aside.
  2. In the same pan heat the remaining oil add onions and sugar and saute till sugar caramalizes. Add green chillies, garlic, ginger and saute for two minutes.
  3. Add salt, cayenne pepper, turmeric powder, roasted cuminpowder and coriander powder and saute for a minute.
    Add asparagus and saute for a minute. Remove from flame and serve hot.
