Anda Pav Toast

A street style egg is special which involves a spicy egg omelette between pavs and cooked till crisp like a toast. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 8 eggs
  • 4 pavs
  • Salt to taste
  • 4 tablespoons onion chopped + to serve 
  • 3-4 green chillies, chopped
  • 4 tablespoons fresh coriander leaves, chopped
  • 1 teaspoon red chilli powder
  • 1 teaspoon garam masala powder
  • 8 teaspoons butter
  • Tomato ketchup to serve 

Method

  1. Break in the eggs and sprinkle salt, whisk well using a fork.
  2. Heat oil in a non-stick tawa, pour the egg mixture, sprinkle onion, tomatoes, green chillies, coriander leaves, red chilli powder and garam masala powder and cook for 1 minute.
  3. Cut the pavs in half without cutting them through place them on the egg mixture and press gently.
  4. Cook for 1-2 minutes, flip and bring the sides of the cooked egg mixture into the centre of the pavs. Fold the pavs, press gently and apply 4 tsps butter on top. Cook for a minute more.
  5. Flip the pavs and apply the remaining butter on top and press using a masher till the pavs turn crisp.
  6. Take the tawa off the heat and place the anda pav toast on a worktop. Cut them in half and place them on a serving plate.
  7. Serve hot with onion and tomato ketchup.
