Ingredients
- 8 eggs
- 4 pavs
- Salt to taste
- 4 tablespoons onion chopped + to serve
- 3-4 green chillies, chopped
- 4 tablespoons fresh coriander leaves, chopped
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala powder
- 8 teaspoons butter
- Tomato ketchup to serve
Method
- Break in the eggs and sprinkle salt, whisk well using a fork.
- Heat oil in a non-stick tawa, pour the egg mixture, sprinkle onion, tomatoes, green chillies, coriander leaves, red chilli powder and garam masala powder and cook for 1 minute.
- Cut the pavs in half without cutting them through place them on the egg mixture and press gently.
- Cook for 1-2 minutes, flip and bring the sides of the cooked egg mixture into the centre of the pavs. Fold the pavs, press gently and apply 4 tsps butter on top. Cook for a minute more.
- Flip the pavs and apply the remaining butter on top and press using a masher till the pavs turn crisp.
- Take the tawa off the heat and place the anda pav toast on a worktop. Cut them in half and place them on a serving plate.
- Serve hot with onion and tomato ketchup.
