By Sanjeev Kapoor 23 Mar 2021 in Recipes Course New Update Main Ingredients Eggs, Eggs Cuisine Mumbai Course Snacks and Starters Prep Time 21-25 minutes Cook time 26-30 minutes Serve 2 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients 2 eggs, boiled and peeled 2 eggs 2 tablespoons butter + for toasting 2 green garlic stalks, chopped 2 medium onions, chopped + for serving 2 medium tomatoes, chopped + for serving ¼ teaspoon red chilli powder A pinch of turmeric powder ½ tablespoon pav bhaji masala ½ tablespoon coriander powder ½ teaspoon garam masala powder Salt to taste 2 tablespoons chopped fresh coriander + for garnish Pavs for serving Method Heat 2 tablespoons butter in a non-stick pan, add chopped green garlic sauté till golden brown. Add onion, cook for 2-3 minutes. Add tomato, salt and cook till tomato is pulpy. Add red chilli powder, turmeric powder, mix well, add pav bhaji masala, coriander powder, garam masala and continue to cook for 2-3 minutes. Add ½ cup of water; mash the cooked mix using the back of a masher. Grate boiled eggs in the mixture, add little more water and cook for a minute. Break eggs in the mixture and scramble them, add coriander, mix well and take the pan off the heat. Heat butter in a non-stick tawa, place slit pavs and toast for a minute from both the side. Place pav in a serving plate with chopped onion and tomato; transfer the anda ghotala in a serving bowl. Garnish with chopped coriander.
