You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda Kaleji Tak-a-tak Recipe

  • Eggs peeled 6

  • Mutton Liver boiled and cut into ½ inch pieces 200 grams

  • Onions 2 medium

  • Oil 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Ginger-garlic paste 2 tablespoons

  • Tomatoes finely chopped 4 medium

  • Green chillies 2

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 2 teaspoons

  • Salt to taste

  • A few sprigs of fresh coriander leaves

  • Ginger cut into thin strips 1 inch

Method

Step 1

Roughly chop onions in a chopper.

Step 2

Heat oil in a non-stick pan, add cumin seeds and onions and saute.

Step 3

Roughly chop eggs.

Step 4

When the onions turn golden, add ginger-garlic paste and mix. Add mutton liver and mix. Add tomatoes. Finely chop green chillies and add.

Step 5

Add red chilli powder, turmeric powder and coriander powder and mix well and saute for ½ minute. Add 1 cup water and mix well. Add salt and mix and cook.

Step 6

While stirring tap the ladle over the liver to cut them into small pieces.

Step 7

Chop coriander leaves.

Step 8

Add eggs and mix. Add coriander leaves and again tap the ladle over the pieces and cook for 2-3 minutes.

Step 9

Transfer into a serving bowl and serve hot garnished with thin strips of ginger.
