You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda & Palak Curry Recipe

  • Eggs 5

  • Spinach puree 1 cup

  • Oil 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Onions , chopped 1/2 cup

  • Garlic , grated 1 teaspoon

  • Green chillies , finely chopped 2

  • Turmeric powder 1/4 teaspoon

  • Gram flour (besan) 1 tablespoon

  • Yogurt 1/2 cup

  • Salt to taste

  • Garam masala powder 1/2 teaspoon

  • Cream 1/4 cup

Method

Step 1

Boil sufficient water in a deep pan, add eggs, cover and cook for 10-12 minutes or till they are hard boiled. Drain, cool and peel them.

Step 2

Meanwhile heat oil in a non-stick pan, add cumin seeds and when their colour changes, add onions, mix and saute.

Step 3

Add garlic, mix and saute till raw smells disappears. Add green chillies and turmeric powder, mix and saute for 1 minute.

Step 4

Add gram flour, mix and saute till fragrant. Add yogurt and mix and cook for 2 minutes. Add spinach puree and 1 cup water and mix well. Cover and cook for 2-3 minutes.

Step 5

Add salt and garam masala powder and mix well. Cover and cook for 2-3 minutes more.

Step 6

Add the eggs and cream and mix.

Step 7

Halve the remaining egg vertically and cut one half into 3 vertical slices.

Step 8

Transfer the curry into a serving bowl, garnish with egg slices and serve hot.
