Ingredients list for Anda & Palak Curry
- 5 Eggs
- 1 cup Spinach puree
- 2 tablespoons Oil
- 1/2 teaspoon Cumin seeds
- 1/2 cup Onions , chopped
- 1 teaspoon Garlic , grated
- 2 Green chillies , finely chopped
- 1/4 teaspoon Turmeric powder
- 1 tablespoon Gram flour (besan)
- 1/2 cup Yogurt
- to taste Salt
- 1/2 teaspoon Garam masala powder
- 1/4 cup Cream
Method
- Boil sufficient water in a deep pan, add eggs, cover and cook for 10-12 minutes or till they are hard boiled. Drain, cool and peel them.
- Meanwhile heat oil in a non-stick pan, add cumin seeds and when their colour changes, add onions, mix and saute.
- Add garlic, mix and saute till raw smells disappears. Add green chillies and turmeric powder, mix and saute for 1 minute.
- Add gram flour, mix and saute till fragrant. Add yogurt and mix and cook for 2 minutes. Add spinach puree and 1 cup water and mix well. Cover and cook for 2-3 minutes.
- Add salt and garam masala powder and mix well. Cover and cook for 2-3 minutes more.
- Add the eggs and cream and mix.
- Halve the remaining egg vertically and cut one half into 3 vertical slices.
- Transfer the curry into a serving bowl, garnish with egg slices and serve hot.
