Ingredients list for Akuri
- 4 Eggs
- 2 teaspoons Oil
- 1 medium Onion finely chopped
- 1-2 Green chillies finely chopped
- 1 teaspoon Fresh coriander leaves chopped, 1 tablespoon +
- ¼ teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- ½ teaspoon Cumin powder
- to taste Salt
- 1 tablespoon Butter
- 4 Bread toasts
Method
- Heat oil in a non-stick pan. Add onion and green chillies and sauté till onion turns golden.
- Add tomato and sauté for 1 minute. Add 1 tablespoon coriander leaves and sauté for 30 seconds.
- Add turmeric powder, chilli powder and cumin powder, mix well and sauté for 1 minute.
- Break eggs into a bowl, beat well and add to pan along with salt, Mix lightly for 1 minute. Add butter and remaining coriander leaves and mix well.
- Cut bread toasts into triangles.
- Garnish with a coriander sprig and serve hot with toast triangles.
