Ingredients list for Vratwali Aloo Rassa Sabzi

  • 5 medium Potatoes , boiled, peeled and mashed
  • 1 tablespoon Ghee
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chilli powdefr
  • to taste Salt
  • 1 teaspoon Sugar
  • 1/4 cup Roasted peanuts , powdered
  • 2 tablespoons Fresh coconut , scraped
  • 2 tablespoons Fresh coriander leaves , chopped
  • to garnish Fresh coriander sprig

Method

  1. Heat ghee in a deep non-stick pan. Add cumin seeds and once they start to change colour, lower the heat and add red chilli powder, salt, sugar and mix well.
  2. Add boiled potatoes and mix well. Add powdered peanuts, coconut and coriander leaves and mix well.
  3. Add 2 cups water and mix and cook on medium heat for 4-5 minutes.
  4. Transfer into a serving bowl, garnish with coriander sprig and serve hot with puris.
