How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Vari ka Pulao - SK Khazana Recipe

  • Samo rice 1 1/2 cups

  • Ghee 1 1/2 tablespoons

  • Cumin seeds 1 teaspoon

  • Green chillies 3

  • Cashewnuts halved 10-12

  • Carrot cut into small cubes 1 medium

  • Yam peeled and cut into small cubes 80 grams

  • Red pumpkin (bhopla/kaddu) peeled and cut into small cubes 80 grams

  • Tomato seeded and cut into small cubes 1 medium

  • Ginger-green chilli paste 1 tablespoon

  • Rock salt (sendha namak) to taste

  • coriander leaves chopped 2 tablespoons

  • coriander sprig for garnish


Step 1

Heat ghee in a deep non-stick pan, add cumin seeds and sauté till their colour changes. Break the green chillies in half and add in the pan, sauté well.

Step 2

Add cashewnuts, carrot, yam, red pumpkin, tomato, ginger-green chilli paste and rock salt and mix well.

Step 3

Add vari, mix well and sauté for 1 minute. Add 2½ cups water and mix well. Cover and cook for 8-10 minutes.

Step 4

Add coriander leaves and mix gently. Take the pan off the heat.

Step 5

Transfer into a serving plate, garnish with fresh coriander sprig and serve hot.
