Hindi: palak
Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Spinach pastry Recipe

  • Spinach blanched and chopped (For filling)

  • Refined flour (maida) (For dough) 2 cups

  • Yeast (For dough) 1 tablespoon

  • Sugar (For dough) 1 teaspoon

  • Oil (For dough) 1 tablespoon

  • Salt (For dough) to taste

  • Yogurt (For dough) 2 tablespoons

  • Baking soda (For dough) a pinch

  • For filling

  • Spinach blanched and chopped 1 bunch

  • Onion chopped 1 medium

  • Green chilli finely chopped 1

  • Tomato finely chopped 1 medium

  • Olive oil 1 tablespoon

  • Salt to taste


Step 1

Melt yeast in two tablespoon warm water. Set aside.

Step 2

Make a soft dough with refined flour, yeast, sugar, oil and salt. Set aside for one hour.

Step 3

Punch the dough and make two equal balls. Roll each ball to a big thick circle.

Step 4

Cut each into 4 triangles. Set aside for five minutes.

Step 5

To prepare the filling, heat oil in a non stick pan, add onions and saute for two minutes.

Step 6

Add chilli, tomato and salt. Toss till soft. Remove from heat and cool.

Step 7

Place the filling on center on the triangle and place the other triangle on top. Seal well.

Step 8

Similar way make the other triangles.

Step 9

Place the spinach pastries on a baking tray and bake in a preheated oven for fifteen minutes at 180º degrees.

Step 10

Allow to cool and serve with ketchup.
