Soya Cashew Chilli

Soya chunks and cashew nuts cooked with capsicum, onions and some assorted Chinese sauces. This can be served with fried rice. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 cups soya chunks
  • 2 tablespoons refined flour
  • 3 tablespoons cornflour/ corn starch
  • Salt to taste
  • Black pepper powder to taste
  • 1 teaspoon soy sauce
  • Oil to deep fry
  • 12-15 cashew nuts
  • 3-4 garlic cloves, chopped
  • 3 green chillies, chopped
  • 1 tablespoon green chilli sauce
  • 1/2 teaspoon white pepper powder
  • 1 medium onion, quartered
  • 2 green capsicums, diced
  • 2 tablespoons chopped spring onion greens 
  • 1 tablespoon lemon juice

Method

  1. Soak the soya chunks in hot water for fifteen minutes. Drain away all the water. Add refined flour, one tablespoon corn flour, salt, black pepper powder, some soy sauce and a little water and mix properly. Set aside for ten minutes. Heat sufficient oil in a kadai.
  2. Fry cashewnuts till golden brown. Drain and set aside. In the same oil deep fry soya chunks. Drain and set aside. Heat one tablespoon oil in a pan. Add chopped garlic and sauté. Add a little water to prevent burning. Add chopped green chillies, remaining soy sauce, green chilli sauce, salt, white pepper powder and a little water.
  3. Bring it to a boil. Add soya chunks and stir. Dissolve the remaining corn flour in water and add. Add fried cashewnuts, quartered onion, green capsicums, chopped spring onion greens and stir. Take off the heat and stir in lemon juice. Serve hot.
