Shrimps and bean sprouts ground with some vegetables, mixed with gram flour and deep fried. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Shrimp Fritters

  • 200 grams Shrimps amall , peeled and chopped
  • for deep-frying Oil
  • 1/2 cup Bean sprouts
  • 2 Spring onions with greens finely chopped
  • 1 small Carrot finely chopped
  • 1/2 small Sweet potato peeled and finely chopped
  • 1 1/4 cup Gram flour (besan)
  • 1 teaspoon Baking powder
  • to taste Salt
  • 2 Green chillies finely chopped
  • 1 Egg well beaten

Method

  1. Heat sufficient oil in a kadai.
  2. Blend together shrimps, bean sprouts, spring onions, carrot and sweet potato to a coarse paste.
  3. Mix gram flour, baking powder, salt and green chillies in a bowl. Add the beaten egg, one cup water and the ground mixture and mix well.
  4. Drop small portions of the batter into hot oil and deep-fry the fritters till light brown and crisp all around. Drain on absorbent paper.
  5. Arrange them on a serving plate and serve hot.
