How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Paushtik Poha Recipe

  • Pressed rice (poha) 2 cups

  • Soya granules 1/2 cup

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Green chillies chopped 3

  • Curry leaves 8-10

  • Turmeric powder 1/2 teaspoon

  • Onions chopped 2 medium

  • Roasted peanuts 1/2 cup

  • Salt to taste

  • Lemon juice 2 tablespoons

  • Fresh coriander leaves chopped 1/4 cup

Method

Step 1

Take poha in a colander, pour three to four cups of water evenly to moisten them. Drain well. Wash soy granules with warm water or alternately soak it in one-cup water for fifteen to twenty minutes. Drain and keep aside. Heat oil in a non-stick pan and add cumin seeds. Stir-fry briefly. Add green chillies, curry leaves, turmeric powder and onions. Sauté for two minutes on medium heat.

Step 2

Add soy granules and sprinkle quarter cup water on it. Cook covered on low heat for five minutes. Stir well. Add poha and toss over medium heat till it is heated through. Add roasted peanuts, salt and lemon juice. Toss well. Serve hot immediately garnished with coriander leaves.
