Ingredients list for Paushtik Poha

  • 2 cups Pressed rice (poha)
  • 1/2 cup Soya granules
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 3 Green chillies chopped
  • 8-10 Curry leaves
  • 1/2 teaspoon Turmeric powder
  • 2 medium Onions chopped
  • 1/2 cup Roasted peanuts
  • to taste Salt
  • 2 tablespoons Lemon juice
  • 1/4 cup Fresh coriander leaves chopped

Method

  1. Take poha in a colander, pour three to four cups of water evenly to moisten them. Drain well. Wash soy granules with warm water or alternately soak it in one-cup water for fifteen to twenty minutes. Drain and keep aside. Heat oil in a non-stick pan and add cumin seeds. Stir-fry briefly. Add green chillies, curry leaves, turmeric powder and onions. Sauté for two minutes on medium heat.
  2. Add soy granules and sprinkle quarter cup water on it. Cook covered on low heat for five minutes. Stir well. Add poha and toss over medium heat till it is heated through. Add roasted peanuts, salt and lemon juice. Toss well. Serve hot immediately garnished with coriander leaves.
