What is the best thing one could rustle up in a hurry when hunger pangs are unbearable? The first thing that comes to mind is pasta! Believe it or not, it is the mainstay dish of all those who want a filling meal in a jiffy. What fascinates most food lovers is that it is available in a multitude of shapes, colours and now even flavours. The variety of shapes, sizes and designs include tubes, ribbons, spirals, shells, bows and wheels. Pleasures of pasta!

Ingredients for Pasta with Cauliflower Sauce - SK Khazana Recipe

  • Pasta boiled 1 1/2 cups

  • Cauliflower separated into medium florets 1 large

  • Olive oil 1 tablespoon

  • Garlic finely choped 1 1/2 tablespoons

  • Button mushrooms sliced 7-8

  • Mixed capsicum triangles 1 cup

  • Broccoli blanched 8-10 florets

  • Salt to taste

  • Crushed black peppercorns to taste

  • Red chilli flakes 1 1/2 teaspoons

  • Parsley finely chopped 1 teaspoon

  • Fresh thyme 3-4 sprigs

  • Parsley sprig for garnish


Step 1

Heat sufficient water in a deep non-stick deep pan, add salt and allow the water to come to a boil. Add cauliflower florets and cook till they soften. Strain from the water and put them into a bowl with ice cubes in cold water.

Step 2

Strain and put the cooked cauliflower into a blender jar and blend into a fine puree. .

Step 3

Heat oil in a non-stick pan, add garlic and sauté till light golden. . Add mushrooms and mix well.

Step 4

Add mixed capsicum triangles, mix well and saute for 1-2 minutes. Add broccoli and toss well.

Step 5

Add salt, crushed black peppercorns and ½ tsp dried red chilli flakes and toss well. Add pasta and toss well.

Step 6

Add the cauliflower puree, salt, crushed black peppercorns, remaining red chilli flakes and parsley, mix well and cook for 1 minute.

Step 7

Add thyme and mix well. Cook for 1 minute and take it off the heat.

Step 8

Transfer into a serving plate and drizzle olive oil. Garnish with dried red chilli flakes and a parsley sprig and serve hot.
