Paneer Yogi

Sautéed paneer cubes cooked in a yogurt based gravy. Serve this delicious recipe with any Indian bread of your choice. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 250 grams paneer (cottage cheese),cut into ½ inch cubes
  • 3/4 cup yogurt
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup cashewnuts
  • 5 green chillies
  • 2 green cardamoms
  • 1/2 inch cinnamon stick
  • 2 cloves
  • 1/2 inch ginger, chopped
  • 4 tablespoons oil

Method

  1. Blend yogurt with salt, sugar and one green chilli to a smooth paste.
  2. Make a paste of cashews and three chillies and set aside. Chop one chilli and set it aside.Heat half tablespoon oil in a non-stick pan.
  3. Add paneer and saute for three minutes and sprinkle salt on it. Remove and keep aside.
  4. Heat remaining oil in a non-stick pan. Add cardamoms, cinnamon, cloves and ginger and saute for a minute.
  5. Add cashew-chilli paste and stir on low heat for two minutes. Add yogurt and keep stirring till the mixture thickens.
  6. Add salt, chopped chilli and cover and cook for a minute.Add the paneer and keep stirring slowly.Remove and serve hot with chapatis.
