Ingredients 

  • 100 grams cottage cheese
  • 8-10 button mushrooms
  • 2 bunches spinach
  • 1 tablespoon oil
  • 2-3 tablespoons gram flour (besan)
  • 4 tablespoons thick yogurt
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon cumin seeds
  • 3-4 green chillies
  • 1 teaspoon garam masala powder
  • Red capsicum curls for garnishing

Method

  1. Boil sufficient water in a deep non-stick pan, add spinach and blanch for 2 minutes. Drain, refresh in cold water and blend to a puree with ½ cup water.
  2. Heat oil in another non-stick pan.
  3. Put gram flour, yogurt, turmeric powder and salt in a bowl and mix. Add ½ cup water and whisk till smooth.
  4. Add cumin seeds to the 2nd pan and sauté till they change colour.
  5. Slit green chillies without cutting through and add to the pan. Add gram flour mixture and mix well.
  6. Quarter button mushrooms and add to the pan and mix well. Cook for 5-7 minutes, stirring continuously.
  7. Cut cottage cheese in small cubes and add to the pan.
  8. Add spinach puree and mix well. Add garam masala powder and mix well. Adjust salt and mix again. Cook till the mixture thickens.
  9. Transfer the mixture into a serving bowl, garnish with red capsicum curls and serve immediately.
