Ingredients 

  • 14-16 button mushrooms 
  • 1 tablespoon crushed garlic 
  • 1 tablespoon grated ginger
  • 2-3 green chillies 
  • 18-20 shrimps 
  • 2 spring onion bulbs
  • Salt to taste 
  • 2 tablespoons olive oil
  • Crushed black peppercorns to taste
  • Juice of 1 lemon 

Method

  1. Discard stalks of mushrooms to make them hollow.
  2. Put garlic and ginger in a mixer jar. Roughly chop green chillies and add. Add shrimps. Quarter spring onion bulbs, add and grind. Add salt and grind to a smooth paste. Transfer the paste into a bowl. 
  3. Dampen your palms with water and stuff the ground paste into the hollowed mushrooms.
  4. Put olive oil in a bowl, add salt, crushed peppercorns and lemon juice and mix well. Roll the mushrooms in this mixture, place them in an air fryer basket and cook at 180º C for 10 minutes.
  5. Arrange the stuffed mushrooms on a serving plate and serve hot.
