History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Jalfrazie Recipe

  • Cottage Cheese cut into 1”cubes 250 grams

  • Tomatoes roughly chopped 2 medium

  • Oil 2 tablespoons + to deep fry

  • Green capsicums cut into thin strips 2 medium

  • Ginger chopped 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Fennel powder 1/2 teaspoon

  • Garam masala powder 1 teaspoon

  • Tomatoes pureed 2 medium

  • Tomato sauce 1 tablespoon

  • Salt to taste

  • Coriander leaves chopped 2 tablespoons

Method

Step 1

Heat sufficient oil in a kadai. Deep fry the cottage cheese till golden brown. Drain on an absorbent paper and set aside.

Step 2

Heat two tablespoons oil in a non stick pan. Add onions, capsicum, ginger, garlic and sauté till onions are golden brown..

Step 3

Add turmeric powder, fennel powder and garam masala. Sauté for half minute. Add tomatoes, tomato sauce and salt. Cook for five to seven minutes.

Step 4

Add half cup water and mix well. Add cottage cheese pieces and simmer for ten minutes or until the gravy is thick.

Step 5

Serve hot garnished with coriander leaves.
