Ingredients list for Paneer Frankie-SK Khazana

  • 8 Cottage cheese (paneer) thick strips
  • 4 Refined flour (maida) rotis
  • 3 teaspoons Red chilli powder
  • to taste Black salt
  • 1 1/2 teaspoons Coriander powder
  • 2 teaspoons Chaat masala
  • to taste Salt
  • 1 tablespoon Oil
  • 1 Medium onion finely chopped
  • 1 teaspoon Ginger-garlic paste
  • 1 Medium tomato finely chopped
  • 1 teaspoon Cumin powder
  • 1/4 teaspoon Turmeric powder
  • as required Chilli vinegar
  • as required Onion strips
  • as required Fresh coriander leaves chopped

Method

  1. Mix together 2 teaspoons red chilli powder, black salt, 1 teaspoon coriander powder and chaat masala in a plate. Add salt and mix.
  2. Heat 1 tablespoon oil in a non-stick pan, add onion and sauté till translucent. Add ginger-garlic paste, mix and sauté till fragrant,
  3. Add tomato and sauté till tomato turns soft. Add 1 teaspoon red chilli powder, ½ teaspoon coriander powder, 1 teaspoon cumin powder, ¼ teaspoon turmeric powder and salt and mix well.
  4. Add 2 tablespoons water and mix. Add 8 thick cottage cheese strips and mix. Add a little water
    and mix and cook for 1 minute. Take the pan off the heat and set aside to cool.
  5. Heat a non-stick tawa and warm the refined flour rotis on it.
  6. For each Frankie keep a roti on the work top, place some cottage cheese mixture in the centre, drizzle some chilli vinegar on top, sprinkle some of the above spice mix, place some onion strips and coriander leaves and roll.
  7. Wrap the rolls in colourful tissue napkins or aluminium foil and serve immediately.
