Ingredients list for Oat Pancakes With Dried Fruit

  • 1/8 cup Oatmeal
  • 1/4 cup Refined Flour
  • 1/4 cup Whole wheat flour (atta)
  • 1 a pinch Soda bicarbonate
  • 1 pinches Baking powder
  • 1 tablespoon Powdered sugar
  • 1 1/2 Eggs
  • 1/2 cup Buttermilk
  • 1/8 cup Milk
  • 1 tbsp + to shallow fry Oil
  • a few drops Vanilla essence
  • Filling
  • 2 tablespoons Butter
  • 1/2 cup Dates chopped
  • 15 Cashewnuts chopped
  • 15 Pistachios chopped
  • 15 Pistachios chopped
  • 15 Almonds chopped
  • 3/4 cup Maple syrup

Method

  1. Sift together flours with soda carbonate and baking powder into a bowl. Add powdered sugar and mix. Add eggs and mix. Add buttermilk and mix well to make a smooth batter.
  2. Add oatmeal and milk and mix. Add a little oil and vanilla essence and mix well. To make the filling, melt butter in a pan and toss all the dry fruits in it for two to three minutes.
  3. Transfer into a bowl and let it cool a bit. Add maple syrup and mix. Heat a pan, grease it with a little oil. Pour a ladleful of batter and spread around the pan.
  4. Drizzle a little oil all round and let it cook on medium heat for two minutes. Flip and cook on the other side. Place a little of the filling on one side of the pancake and roll it up. Serve hot immediately.
  5. Make other pancakes with the remaining batter in the same way.
