Ingredients for Oat Pancakes With Dried Fruit Recipe

  • Oatmeal 1/8 cup

  • Refined Flour 1/4 cup

  • Whole wheat flour (atta) 1/4 cup

  • Soda bicarbonate 1 a pinch

  • Baking powder 1 pinches

  • Powdered sugar 1 tablespoon

  • Eggs 1 1/2

  • Buttermilk 1/2 cup

  • Milk 1/8 cup

  • Oil 1 tbsp + to shallow fry

  • Vanilla essence a few drops

  • Filling

  • Butter 2 tablespoons

  • Dates chopped 1/2 cup

  • Cashewnuts chopped 15

  • Pistachios chopped 15

  • Pistachios chopped 15

  • Almonds chopped 15

  • Maple syrup 3/4 cup


Step 1

Sift together flours with soda carbonate and baking powder into a bowl. Add powdered sugar and mix. Add eggs and mix. Add buttermilk and mix well to make a smooth batter.

Step 2

Add oatmeal and milk and mix. Add a little oil and vanilla essence and mix well. To make the filling, melt butter in a pan and toss all the dry fruits in it for two to three minutes.

Step 3

Transfer into a bowl and let it cool a bit. Add maple syrup and mix. Heat a pan, grease it with a little oil. Pour a ladleful of batter and spread around the pan.

Step 4

Drizzle a little oil all round and let it cook on medium heat for two minutes. Flip and cook on the other side. Place a little of the filling on one side of the pancake and roll it up. Serve hot immediately.

Step 5

Make other pancakes with the remaining batter in the same way.
