Ingredients
- 450 grams potatoes
- 1 medium onion
- 2 green chillies
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- ¼ teaspoon fenugreek seeds
- 1 teaspoon coriander seeds
- ¼ teaspoon turmeric powder
- 1 tablespoon tamarind pulp
- Salt to taste
Method
- Peel and wash potatoes. Boil them in salted water until soft, then mash them.
- Peel, wash onion and chop coarsely. Remove stems, wash, slit, de-seed and finely chop green chillies.
- Heat oil and add mustard seeds. When they start crackling add fenugreek seeds and coriander seeds.
- Add onions, green chillies and turmeric powder and fry until soft and brown.
- Pour in tamarind pulp and simmer for five minutes. Finally stir in the mashed potatoes and add salt. Cover the pan and cook gently for five more minutes. Serve hot.
