Ingredients list for Mutton Kalimiri
- 600 grams Mutton cut into 1½ inch pieces on the bone
- 1 tablespo + for sprinkling Crushed black peppercorns 1 tablespoon
- 3 tablespoons Ghee
- 1 inch Cinnamon
- 2 Bay leaves
- 5-6 Green cardamoms
- 4 Black cardamoms
- 4 Green chillies slit
- 4 medium onions sliced
- 2 tablespoons Ginger-garlic paste
- to taste Salt
- 3 tablespoons Cashewnut paste
- 1 teaspoon Garam masala powder
- ¼ cup Fresh cream
Method
- Heat 2 tablespoons ghee in a non-stick pan, add cinnamon, bay leaves, green cardamoms, black cardamoms, green chillies and sauté. Add onions and sauté for 3-4 minutes.
- Add mutton and sauté for 2 minutes. Add ginger-garlic paste, mix well and sauté for 3-4 minutes.
- Add salt and mix well. Add 2 cups water, cover and pressure cook on high heat for 5 minutes. Reduce heat and cook for 25 minutes.
- Heat remaining ghee in a non-stick pan. Add crushed peppercorns and cashew nut paste, mix well and cook for 3-4 minutes.
- Reduce heat and add cooked mutton with stock and spices. Mix well and cook for 5 minutes.
- Add garam masala powder, mix well and cook further. Add cream, stir to mix and let it get heated through.
- Sprinkle crushed peppercorns and serve hot.
