Mutton Kalimiri

Ingredients list for Mutton Kalimiri

  • 600 grams Mutton cut into 1½ inch pieces on the bone
  • 1 tablespo + for sprinkling Crushed black peppercorns 1 tablespoon
  • 3 tablespoons Ghee
  • 1 inch Cinnamon
  • 2 Bay leaves
  • 5-6 Green cardamoms
  • 4 Black cardamoms
  • 4 Green chillies slit
  • 4 medium onions sliced
  • 2 tablespoons Ginger-garlic paste
  • to taste Salt
  • 3 tablespoons Cashewnut paste
  • 1 teaspoon Garam masala powder
  • ¼ cup Fresh cream

Method

  1. Heat 2 tablespoons ghee in a non-stick pan, add cinnamon, bay leaves, green cardamoms, black cardamoms, green chillies and sauté. Add onions and sauté for 3-4 minutes.
  2. Add mutton and sauté for 2 minutes. Add ginger-garlic paste, mix well and sauté for 3-4 minutes.
  3. Add salt and mix well. Add 2 cups water, cover and pressure cook on high heat for 5 minutes. Reduce heat and cook for 25 minutes.
  4. Heat remaining ghee in a non-stick pan. Add crushed peppercorns and cashew nut paste, mix well and cook for 3-4 minutes.
  5. Reduce heat and add cooked mutton with stock and spices. Mix well and cook for 5 minutes.
  6. Add garam masala powder, mix well and cook further. Add cream, stir to mix and let it get heated through.
  7. Sprinkle crushed peppercorns and serve hot.
