Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Tikka-SK Khazana Recipe

  • Button mushrooms 10-12

  • Oil for greasing

  • Hung yogurt 1/2 cup

  • Ginger-garlic paste 1 tablespoon

  • Kashmiri red chilli powder 2 teaspoons

  • Garam masala powder 1 teaspoon

  • Dried fenugreek leaf (kasuri methi) powder 1/2 teaspoon

  • Salt to taste

  • Lemon juice 1/2 tablespoon

  • Mustard oil 1 tablespoon

  • Red capsicum large pieces 8-10

  • Green capsicum large pieces 8-10

  • Butter q for brushi

  • Green chutney to serve


Step 1

Mix together hung yogurt, ginger-garlic paste, chilli powder, garam masala powder, dried fenugreek leaves powder, salt, lemon juice and mustard oil in a bowl.

Step 2

Add mushrooms, red and green capsicums, mix well and set aside to marinate for 30 minutes.

Step 3

Preheat oven to 200º C. Grease a baking tray with some oil.

Step 4

Thread mushrooms and capsicum alternatively onto skewers and transfer onto the greased tray.

Step 5

Put tray in the preheated oven and bake for 10 minutes. Remove from oven and brush with some butter.

Step 6

Drizzle some green chutney on the serving plate, place the skewers on it and serve hot.
