Ingredients
- 2 cups sprouted green moong
- Salt to taste
- 1 tablespoon oil
- A pinch of asafoetida
- 1 medium onion, finely chopped
- 1/2 inch ginger piece, chopped
- 2 green chillies, chopped
- 1 medium tomato, finely chopped
- 1 teaspoon dry mango powder (amchur)
- 2 tablespoons chopped fresh coriander leaves
Method
- Blanch the moong sprouts in plenty of boiling water with a pinch of salt for about three to four minutes.
- Drain. Heat oil in a pan.
- Add asafoetida and onion and sauté for two minutes.
- Add ginger and green chillies and continue to sauté for another minute.
- Add tomato and sauté for two to three minutes.
- Add the sprouts, salt and dry mango powder and stir.
- Cook on medium heat for two to three minutes.
- Garnish with coriander leaves and serve.
