Ingredients for Mix Sauce Pasta Recipe

  • Cheese sauce

  • Processed cheese grated 1/2 cup

  • Butter 1 tablespoon

  • Refined flour 1 tablespoon

  • Milk 3/4 cup

  • Black peppercorns crushed to taste

  • Salt to taste

  • Tomato sauce

  • Medium tomatoes blanched, peeled and chopped 4

  • Olive oil 1 tablespoon

  • Garlic cinely chopped 5-6 cloves

  • Red chilli flakes 1/2 teaspoon

  • Salt to taste

  • Tomato ketchup 2 tablespoons

  • Black peppercorns crushed to taste

  • Pasta

  • Penne pasta boiled 1 1/2 cups

  • Olive oil 1 tablespoon

  • Garlic cloves choppped 3-4 cloves

  • Large onion sliced 1

  • Broccoli flores blanched 5-6

  • Button mushrooms quartered 3-4

  • Small red capsicum diced 1/2

  • Small green zucchini cut into 1 inch cubes 1/2

  • Small yellow squash cut into 1 inch cubes 1/2

  • Salt to taste

  • Black peppercorns crushed to taste

  • Parmesan cheese block as required

  • Red chilli flakes 1 teaspoon

  • Parmesan cheese shavings to garnish

Method

Step 1

Heat butter in a non-stick pan, add refined flour and whisk well. Add milk and whisk to avoid lumps. When the mixture thickens slightly, add cheese and mix till cheese dissolves. Add salt and crushed black pepper and mix well. Take the pan off the heat and set aside.

Step 2

Heat olive oil in another non-stick pan, add garlic and saute till raw smell disappears. Add chilli flakes and mix well. Add tomatoes and mix well. Add salt and mix well. Add ketchup, mix well and cook till the mixture is thick. Add crushed black peppercorns and mix well. Take the pan off the heat.

Step 3

Heat olive oil in yet another non-stick pan, add garlic and onion, mix and sauté till golden brown.

Step 4

Add broccoli, mushrooms, red capsicum, zucchini and yellow squash and mix well. Add salt and crushed black peppercorns, mix well and cook for 1-2 minutes.

Step 5

Add tomato sauce and white sauce, mix well and cook for 2-3 minutes.

Step 6

Add pasta and mix well and cook for 1-2 minutes. Grate parmesan cheese into the pan and sprinkle red chilli flakes and mix well.

Step 7

Transfer into a serving bowl, garnish with parmesan shavings and sprinkle crushed black peppercorns on top and serve hot.
