Ingredients for Missal Bunny Chow Recipe

  • Moth sprouts 1 1/2 cups

  • Burger buns 4

  • Oil 3 tablespoons

  • Mustard seeds 1 teaspoon

  • Asafoetida 1 pinch

  • Curry leaves 6-8

  • Medium onions finely chopped 2 + to garnish

  • Ginger-garlic paste 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 1/2 teaspoons

  • Goda masala 1 tablespoon

  • Salt to taste

  • Farsan to garnish

  • Fresh coriander sprigs to garnish


Step 1

Preheat the oven to 180˚C.

Step 2

Cut a thin slice from the top of the burger buns, scoop out from the middle to make a cavity in the center. Reserve the tops.

Step 3

Place the buns with the tops on a baking tray and bake for 10 minutes.

Step 4

To make missal, heat oil in a deep non-stick pan, add mustard seeds and let them splutter. Add a pinch of asafoetida, curry leaves and onions, mix and sauté till golden brown.

Step 5

Add ginger-garlic paste, mix and sauté for 1 minute or till the raw smells disappear. Add moth sprouts, turmeric powder, red chilli powder and goda masala powder, mix well and saute for 1 minute.

Step 6

Add 4 cups of water, mix well and cook for 8-10 minutes. Add salt, mix well, cover and cook for 8-10 minutes. Take the pan off the heat.

Step 7

Put some sprout mixture into the cavities of each burger bun, top with onion and farsan, garnish with a coriander sprig and serve immediately.
