Ingredients list for Mini Soya Cottage Pies
- 100 grams Soya Granules soaked and squeezed
- 8 Tartlet Cases
- 1 tablespoon Oil
- 5-6 cloves Garlic chopped
- 1 medium Onion chopped
- 1/2 cup Tomato puree
- to taste White pepper powder
- to taste Salt
- 1/2 teaspoon Fresh thyme chopped
- 3 tablespoons Green peas boiled
- 1/2 teaspoon Fresh parsley chopped
- to taste Black pepper powder
- 2 tablespoons Butter
- 2 medium Potatoes mashed
- 2 tablespoons Cream
- a pinch Nutmeg powder
Method
- Preheat oven on grill mode at 180 ºC. For filling, heat oil in a pan and sauté garlic and onion till soft.
- Add tomato puree, white pepper powder, salt and thyme.
- Add soya mince and green peas. Mix and cook for a minute.
- Reduce heat and cook uncovered until moisture evaporates.
- Add parsley and black pepper powder and stir. Remove from heat.
- Set aside. In another pan melt butter. Add mashed potatoes and cream and mix well Remove from heat and allow it cool to room temperature.
- Add salt, white pepper powder and nutmeg powder. Put the potato mixture into a piping bag with star nozzle .
- Arrange tartlet cases in a baking tray.
- Place a spoonful of soya mixture in each case and pipe it over with creamy mashed potatoes .
- Bake in a preheated oven under a hot grill until the tops are golden brown. Garnish with parsley sprig and serve hot.
