With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Mini Soya Cottage Pies Recipe

  • Soya Granules soaked and squeezed 100 grams

  • Tartlet Cases 8

  • Oil 1 tablespoon

  • Garlic chopped 5-6 cloves

  • Onion chopped 1 medium

  • Tomato puree 1/2 cup

  • White pepper powder to taste

  • Salt to taste

  • Fresh thyme chopped 1/2 teaspoon

  • Green peas boiled 3 tablespoons

  • Fresh parsley chopped 1/2 teaspoon

  • Black pepper powder to taste

  • Butter 2 tablespoons

  • Potatoes mashed 2 medium

  • Cream 2 tablespoons

  • Nutmeg powder a pinch

Method

Step 1

Preheat oven on grill mode at 180 ºC. For filling, heat oil in a pan and sauté garlic and onion till soft.

Step 2

Add tomato puree, white pepper powder, salt and thyme.

Step 3

Add soya mince and green peas. Mix and cook for a minute.

Step 4

Reduce heat and cook uncovered until moisture evaporates.

Step 5

Add parsley and black pepper powder and stir. Remove from heat.

Step 6

Set aside. In another pan melt butter. Add mashed potatoes and cream and mix well Remove from heat and allow it cool to room temperature.

Step 7

Add salt, white pepper powder and nutmeg powder. Put the potato mixture into a piping bag with star nozzle .

Step 8

Arrange tartlet cases in a baking tray.

Step 9

Place a spoonful of soya mixture in each case and pipe it over with creamy mashed potatoes .

Step 10

Bake in a preheated oven under a hot grill until the tops are golden brown. Garnish with parsley sprig and serve hot.
