Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Methi Ankurit Recipe

  • Methi seeds 4 tablespoons

  • Lettuce torn 2 cups

  • Raisins 2 tablespoons

  • Walnuts chopped 2 tablespoons

  • Capsicum diced 1/4 teaspoon

  • Tomato diced 1 cup

  • Lemon juice 1 teaspoon

  • Honey 1 teaspoon

  • Salt to taste

  • White pepper powder to taste

  • Rose water 1 teaspoon

  • Rose petals 5-6

Method

Step 1

To sprout methi - Soak the methi seeds in enough water for 4 to 6 hours.

Step 2

Add 1 tsp rose water in it. Drain the water and keep the methi seeds covered in warm place for 24 hours.

Step 3

For salad - soak the lettuce in chilled water for 10 to 15 minutes. Drain. Mix all the ingredients together and serve immediately garnished with rose petals.
