Ingredients 

  • 8 eggs
  • 1 medium onion, finely chopped
  • 3 tablespoons coriander leaves, chopped
  • 4-5 green chillies, chopped
  • 2-4 tablespoons milk
  • ½ teaspoon turmeric powder
  • Salt to taste 
  • 2 teaspoons oil
  • Tomato ketchup to serve

Method

  1. Break 4 eggs into a large bowl and whisk well. Strain the mixture into another bowl. Add ½ the chopped onion, 1½ tbsps. coriander leaves, half the green chillies, 1-2 tbsps milk, ¼ tsp turmeric powder and salt, and whisk well.
  2. Heat 1 tsp oil in a shallow non-stick pan and spread it with tissue paper.
  3. Pour a quarter portion of the egg mixture into the pan let it spread all over the pan and cook on low heat for 1 minute. Gently roll from one end to the other to form a log.
  4. Shift the log on one end of the pan pour another quarter portion of the egg mixture and let it spread. Let it cook for 1 minute and start rolling. Repeat till all the mixture is over. Gently take it off the heat. Cook the remaining ingredients similarly.
  5. Cut the rolls into slices, arrange them on a serving plate and serve hot with tomato ketchup.
