Ingredients
- 300 grams macaroni
- 3 tablespoons chickpeas (kabuli chana),cooked
- 4 tablespoons hummus
- 1/4 medium red capsicum
- 1/4 teaspoon green capsicum
- 4-5 cloves garlic
- Salt to taste
- 1 teaspoon olive oil
- 15-20 cherry tomatoes, halved
- 1/2 teaspoon crushed red chillies
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon extra virgin olive oil
Method
- Cut red and green capsicums into small cubes. Slice garlic. Heat plenty of water in a deep non stick pan. When the water begins to boil, add macaroni and salt and let it cook. Heat olive oil in a non stick pan.
- Add garlic and sauté for a minute. Add cherry tomatoes and salt and let it cook till soft. Add hummus and ½ cup water and stir to mix well. Drain macaroni and add to the tomatoes mixture.
- Add chickpeas, red and green capsicums, crushed red chillies, salt and mix well. Add coriander leaves and mix. Serve hot drizzled with extra virgin olive oil.
