This recipe is from FoodFood TV channel By Sanjeev Kapoor 27 Jul 2015 in Recipes Course New Update Main Ingredients Lemon Juice, Basmati Rice Cuisine Indian Course Rice Prep Time 51-60 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Lemon and Pumpkin Rice 1 1/2 cups Lemon Juice soaked for an hour 2 teaspoons Basmati Rice 1 Lemon 250 grams Red pumpkin peeled to taste Salt 2 tablespoons Ghee 1 medium Onion 1 teaspoon Cumin seeds 1 teaspoon Mustard seeds 2-3 Green chillies 1 cup Coconut milk Method Heat ghee in a non-stick pan. Slice onion. Add cumin seeds and mustard seeds to the pan and let them splutter. Add onion and sauté till translucent. Cut pumpkin into 1 inch cubes and add to the pan. Add salt and mix well. Cover and cook for 4-5 minutes. Slit green chillies without cutting through and add to the pan. Cover and cook on high heat till the pumpkin changes colour. Add coconut milk and 2 cups water and mix well. Add drained basmati rice and bring it to a boil. Cut the lemon half into 4 pieces and add to the pan. Add lemon juice and mix well. Cover and cook till the rice is done. Transfer onto a serving plate and serve hot.
