Ingredients list for Kurkuri Arbi
- 500 grams Colocassia (arbi) boiled and peeled
- 1 tablespoon Oil
- 2 teaspoons Carom seeds (ajwain)
- a big a pinch Asafoetida
- to taste Salt
- 1 teaspoon Red chilli powder
- 1 tablespoon Fresh coriander leaves chopped
- 1 teaspoon Lemon juice
- 1 teaspoon Chaat masala
Method
- Halve the colocassia vertically and flatten each piece between your palms.
- Heat sufficient oil in a kadai and deep-fry the colocassia till golden brown.
- Drain on absorbent paper.
- Heat one tablespoon oil in a non-stick pan.
- Add carom seeds, asafoetida, salt and red chilli powder and stir.
- Add the fried colocassia slices and mix well.
- Cover and cook on low heat for five minutes.
- Add coriander leaves, lemon juice and chaat masala. Mix well. Serve hot.
