Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Green Tomato Sabzi - SK Khazana Recipe

  • Medium green tomatoes roughly chopped 5

  • Oil 3 tablespoons

  • Ginger paste 1 teaspoon

  • Garlic paste 1 teaspoon

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Dried red chillies 2


Step 1

Heat oil in a deep non-stick pan.

Step 2

Take ginger paste, garlic paste, salt, turmeric powder, red chilli powder and coriander powder in a bowl. Add ¼ cup water and mix well.

Step 3

Add cumin seeds to the oil and sauté till light brown. Add dried red chillies and sauté for few seconds. Add the spice mixture and cook on medium heat for 2-3 minutes.

Step 4

Add green tomatoes and mix well. Add sufficient water and mix well. Cover and cook for 7-8 minutes or till tomatoes turn pulpy.

Step 5

Transfer the subzi into a serving bowl and serve hot.
