Chinese food is an integral part of the Indian culinary scene. In Indian Chinese cuisine the food is modified to suit Indian palate. In this Chinese seasoning and cooking techniques are adapted to Indian tastes and contain larger offering of vegetarian dishes. Today, it is not only enjoyed by the Indians but is also highly appreciated in in Malaysia, Singapore and North America.  
Foods tend to be flavoured with Indian spices such as cumin seeds, coriander seeds, and turmeric, which are traditionally not associated with authentic Chinese cuisine. Hot chilli, ginger, garlic, sesame seeds, dry red chillies, black pepper corns and yogurt are also frequently used in Indo Chinese dishes. This makes Indian Chinese food similar in taste to many dishes of Singapore and Malaysia, which have strong Chinese and Indian cultural influences.
Non-staple dishes are generally served with generous helpings of gravy, although they are also available without gravy. Culinary styles often seen in Indian Chinese fare include chilli where the food is hot and batter-fried; Manchurian which consists of a sweet and salty brown sauce; and Szechwan sauce which is a spicy red sauce. These are generally not used in authentic Chinese food preparation.

Ingredients for Garlic Vegetables with Cashewnuts Recipe

  • Garlic , chopped 3 teaspoons

  • Green capsicum 1 medium

  • Carrot , peeled and cut into small cubes 1 medium

  • Button mushrooms 10-12

  • Chinese black mushrooms , soaked 3-4

  • Broccoli florets , blanched 12-16

  • Cashewnuts 1/4 cup

  • Sweetcorn 1/4 cup

  • Oil 3 tablespoons

  • Vegetable stock 1 cup

  • Star anise 1

  • Salt to taste

  • White pepper powder 1/4 teaspoon

  • Cornflour slurry 2 tablespoons


Step 1

Heat 1 tbsp oil in a non-stick wok. Cut capsicum into ½ inch pieces.

Step 2

Add cashewnuts to the wok and saute till lightly coloured. Transfer into a bowl.

Step 3

Heat 2 tbsps oil in the same wok, add capsicum and saute for 1 minute. Drain and put into another bowl.

Step 4

Add 2 tsps garlic to the oil remaining in the wok and sauté for 30 seconds. Add carrot and mix. Halve the mushrooms with the stems and add and toss.

Step 5

Drain and roughly chop Chinese mushrooms and add along with sweetcorn and mix well. Add vegetable stock, star anise, salt and white pepper powder, mix well and cook.

Step 6

Add broccoli florets to the wok. Add cornflour slurry and mix. Add 1 tsp garlic and mix. Switch off the heat.

Step 7

Add cashewnuts and green capsicum (keeping aside a few of each for garnish) and mix.

Step 8

Transfer into a serving bowl, garnish with reserved cashewnuts and capsicum and serve hot.
