You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Frittata - SK Khazana Recipe

  • Eggs 5

  • Parmesan cheese 30 grams

  • Milk 3/4 cup

  • Dijon mustard paste 1 teaspoon

  • Butter 2 tablespoons

  • Onion sliced 1 medium

  • Red capsicum cut into thin strips 1 small

  • Yellow capsicum cut into thin strips 1 small

  • Button mushrooms sliced 3-4

  • Frozen green peas blanched 1/4 cup

  • Salt to taste

  • Crushed black peppercorns to taste

  • Potato boiled, peeled, halved and sliced horizontally 1 medium

  • Fresh spinach leaves (palak) 2-3

  • Processed cheese 5 tablespoons

  • Iceberg lettuce leaves

  • Cherry tomatoes halved a few

Method

Step 1

Preheat the oven at 180° C.

Step 2

Break the eggs into a large bowl. Grate 20 grams parmesan cheese into it. Add milk and whisk well. Add Dijon mustard and whisk till well combined.

Step 3

Melt butter in a non-stick oven proof pan, add onion and saute till the onions caramelize.

Step 4

Add red capsicum and yellow capsicum and saute for 1 minute. Add mushrooms and saute for a minute.

Step 5

Add green peas and mix well. Add salt and crushed black peppercorns and mix well. Cook for a minute.

Step 6

Add potatoes. Tear spinach leaves and add into the pan, toss well and cook for a minute.

Step 7

Sprinkle 3 tbsps grated processed cheese. Add the egg mixture and mix gently.

Step 8

Grate some parmesan cheese on top and sprinkle remaining processed cheese.

Step 9

Place the pan in the preheated oven and bake for 20 minutes. Take the pan out of the oven and cut into wedges.

Step 10

Place the wedges on individual serving plates, place a few iceberg lettuce leaves and cherry tomatoes by its side and serve hot.
