Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Fried Prawns in Mushroom Ginger Sauce Recipe

  • Medium Prawns shelled and deveined 8-10

  • Mushrooms thinly sliced 1 cup

  • Ginger strips 2 tablespoons

  • Oil 1 tablespoon + for deep-frying

  • Cornflour 4 tablespoons + for coating

  • Garlic finely chopped 1 tablespoon

  • Onion sliced 1 medium

  • Salt to taste

  • Crushed black peppercorns 1 teaspoon

  • Green capsicum juliennes 1 cup

  • Sugar 1 teaspoon

  • Vinegar 1 tablespoon

  • Dark soy sauce 2 tablespoons

  • Vegetable stock 1 1/2 cups

  • Chopped fresh coriander leaves 2 tablespoons

Method

Step 1

Heat sufficient oil in a kadai.

Step 2

Take cornflour on a plate, coat the prawns in it and deep-fry in hot oil. Drain on absorbent paper.

Step 3

Heat one tablespoon oil in a non-stick pan, add garlic, ginger and onions and sauté till the onions turn brown.

Step 4

Add capsicum, salt, crushed peppercorns, sugar, vinegar and soy sauce and mix well. Add one cup vegetable stock and stir well.

Step 5

Add mushrooms and cook for a minute or till the mushrooms turn soft.

Step 6

Take 4 tablespoons cornflour in a bowl, add remaining vegetable stock and mix well to make a smooth slurry. Add the slurry to the mushroom mixture and mix well.

Step 7

Add fried prawns to the mushroom sauce and toss lightly.

Step 8

Serve hot garnished with coriander leaves.
