Ingredients
- 4 large potatoes, boiled, peeled and cut into ½ inch cubes
- 1 tablespoon ghee
- 1/2 teaspoon cumin seeds
- 2 green chillies, finely chopped
- 4 tablespoons peanuts, roasted and crushed
- Salt to taste
- 1/2 teaspoon sugar
- 1/4 cup scraped fresh coconut
- 2 tablespoons chopped fresh coriander leaves
Method
- Heat ghee in a non-stick pan and add cumin seeds. Once the seeds begin to change color, add green chillies and sauté for half a minute.
- Add potatoes and continue to sauté till crisp.
- Add peanuts, salt, sugar and coconut and mix well. Cover and cook on low heat for four to five minutes.
- Transfer into a serving plate, garnish with coriander leaves and serve hot.
