Exotic Vegetables In Plum Sauce

Zucchini, snow peas, coloured capsicums cooked together in plum sauce. Serve this recipe on it's own or with rice. This recipe is from FoodFood TV channel

Ingredients 

  • 1 medium yellow zucchini
  • 1 medium green Zucchini
  • 10-15 snow peas
  • 1/2 small broccoli,separated into florets
  • 1 small green capsicum,cut into 1 inch pieces
  • 1 small yellow capsicum,cut into 1 inch pieces
  • 1 small red capsicum,cut into 1 inch pieces
  • 1/4 Chinese cabbage,cut into 1 inch pieces
  • 200 grams tofu
  • 10-12 plums,chopped
  • 2-3 green chillies,chopped
  • 2 teaspoons ginger paste
  • 4-5 garlic cloves ,chopped
  • 1/4 teaspoon five spice powder
  • 2 tablespoons orange marmalade
  • 1 teaspoon red chilli sauce
  • Salt to taste
  • 3 tablespoons honey
  • 2 tablespoons oil
  • Salt to taste
  • 4 tablespoons cornflour/ corn starch
  • 2 tablespoons chilli oil
  • 1 tablespoon vinegar

Method

  1. Puree plums and put into a deep non stick pan.  Add green chillies, ginger paste, garlic, 5 spice powder and orange marmalade and mix.  Add red chilli sauce and mix.  Add ¼ cup water and salt and mix again.  Add 2 tbsps honey and mix well. Add ¼ cup water and mix. Cook on medium heat.
  2. Heat oil in a non stick wok.  Cut tofu into 1 inch cubes. 
  3. Add yellow and green zucchini and snow peas to the wok along with broccoli, coloured capsicums, Chinese cabbage and tofu and mix well.
  4. Mix cornflour with 3 tbsps water and add some of it to the plum sauce.
  5. Toss the vegetables and add salt and toss again. 
  6. Strain the plum sauce over the vegetables and toss. Add some of the cornflour mixture and mix well.
  7. Add chilli oil, vinegar and remaining honey and mix well.
  8. Serve hot.
