Ingredients
- 1 medium yellow zucchini
- 1 medium green Zucchini
- 10-15 snow peas
- 1/2 small broccoli,separated into florets
- 1 small green capsicum,cut into 1 inch pieces
- 1 small yellow capsicum,cut into 1 inch pieces
- 1 small red capsicum,cut into 1 inch pieces
- 1/4 Chinese cabbage,cut into 1 inch pieces
- 200 grams tofu
- 10-12 plums,chopped
- 2-3 green chillies,chopped
- 2 teaspoons ginger paste
- 4-5 garlic cloves ,chopped
- 1/4 teaspoon five spice powder
- 2 tablespoons orange marmalade
- 1 teaspoon red chilli sauce
- Salt to taste
- 3 tablespoons honey
- 2 tablespoons oil
- Salt to taste
- 4 tablespoons cornflour/ corn starch
- 2 tablespoons chilli oil
- 1 tablespoon vinegar
Method
- Puree plums and put into a deep non stick pan. Add green chillies, ginger paste, garlic, 5 spice powder and orange marmalade and mix. Add red chilli sauce and mix. Add ¼ cup water and salt and mix again. Add 2 tbsps honey and mix well. Add ¼ cup water and mix. Cook on medium heat.
- Heat oil in a non stick wok. Cut tofu into 1 inch cubes.
- Add yellow and green zucchini and snow peas to the wok along with broccoli, coloured capsicums, Chinese cabbage and tofu and mix well.
- Mix cornflour with 3 tbsps water and add some of it to the plum sauce.
- Toss the vegetables and add salt and toss again.
- Strain the plum sauce over the vegetables and toss. Add some of the cornflour mixture and mix well.
- Add chilli oil, vinegar and remaining honey and mix well.
- Serve hot.
