You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Chokha Recipe

  • Eggplant / Brinjal boiled 1 large

  • Potato boiled 1 medium

  • Oil 2 tablespoons

  • Onion chopped 1 small

  • Garlic chopped 5 cloves

  • Ginger chopped 1/2 inch

  • Tomato finely chopped 1

  • Green chillies finely chopped 2-3

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Peel the brinjal and the potato and mash them. Heat oil in a non-stick pan. Add onions, garlic and ginger and saute for a minute on low heat.

Step 2

Add tomatoes and green chillies and saute for a minute. Add salt an d mashed brinjal and potato and mix well. Add coriander leaves and mix well. Serve hot.
