Ingredients
- 4 medium wafer potatoes, peeled
- 2 tablespoons rice flour
- 1½ tablespoons corn flour
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- Salt to taste
- ½ teaspoon carom seeds (ajwain)
- 1 cup gram flour (besan)
- Oil for deep frying
- Green chutney to serve
- Tomato ketchup to serve
Method
- Thickly grate the wafer potatoes and transfer it into a large bowl filled with water. Rinse thoroughly.
- Drain the grated potatoes thoroughly and put into another large bowl.
- Add rice flour, corn flour, red chilli powder, turmeric powder, salt, carom seeds and gram flour and mix till well combined.
- Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper.
- Arrange them on serving platter and serve hot with green chutney and tomato ketchup.
