Chilli Chilli Chicken

Ingredients list for Chilli Chilli Chicken

  • 400 grams Boneless chicken legs cut into 1 inch pieces
  • 4-5 Green chillies light diagonally sliced
  • 2-3 Green chillies diagonally sliced
  • + to deep fry Oil 1 tablespoon
  • 1½ tablespoons Garlic chopped
  • to taste White pepper powder
  • 2 tablespoons coriander leaves chopped
  • 1 Egg
  • to taste Salt
  • 3 tablespoons Cornflour/ corn starch
  • ½ tablespoon Ginger chopped
  • 1 medium Onion cut into cubes and layers separated
  • 1 medium Green capsicum cut into medium pieces
  • 1 tablespoon Soy sauce

Method

  1. Place chicken in a bowl, add ½ tablespoon chopped garlic, pepper powder, 1 tablespoon coriander leaves, egg and salt, mix and set aside for 10-15 minutes. Add 2 tablespoons cornstarch and mix well.
  2. Heat sufficient oil in a pan. Slide the chicken pieces into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
  3. Heat 1 tablespoon oil in a non-stick pan. Add light green chillies and green chillies and sauté on medium heat for a minute. Transfer chillies into a bowl.
  4. Add remaining garlic and ginger to the same pan and sauté for a minute. Add sautéed chillies, onion, capsicum and soy sauce, mix and sauté for a minute.
  5. Mix the remaining cornstarch in some water to make smooth slurry and add to pan. Add fried chicken and toss to mix. Add salt, pepper powder and remaining chopped coriander and toss.
  6. Serve hot.
