Ingredients list for Chicken Parcels
- 1 Boneless Chicken Breasts cut into small cubes
- 2 tablespoons White Bread Slices
- 2 medium Onion chopped
- 2 tablespoons Garlic chopped
- 1 tablespoon Ginger chopped
- to taste Salt
- 1/2 teaspoon Crushed black peppercorns
- 3 tablespoons Peanuts Roasted and peeled
- 2 Green chillies chopped
- 2 teaspoons Lemon juice
- 4 White bread slices
Method
- Heat sufficient oil in a kadai.
- Heat 2 tbsps oil in a non-stick pan, add onions, garlic and ginger and saute.
- Add chicken, salt and crushed black peppercorns and saute for 2 minutes. Cover and cook.
- Crush peanuts. Add green chillies to the pan and mix. Cover and cook till done. Transfer into a bowl.
- Add crushed peanuts and lemon juice and mix well.
- Pour water into another bowl. Trim the edges of the bread slices and dampen them in the water. Squeeze extra water by pressing between your palms.
- Place chicken mixture in the centre of each slice, bring in the edges and shape into oval croquette.
- Slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
- Serve garnished with onion roundels, thin strips of green capsicums and a fresh red chilli flower.
