What is the best thing one could rustle up in a hurry when hunger pangs are unbearable? The first thing that comes to mind is pasta! Believe it or not, it is the mainstay dish of all those who want a filling meal in a jiffy. What fascinates most food lovers is that it is available in a multitude of shapes, colours and now even flavours. The variety of shapes, sizes and designs include tubes, ribbons, spirals, shells, bows and wheels. Pleasures of pasta!

Ingredients for Chicken, Mushroom And Cheese Ravioli Recipe

  • Fresh Pasta Dough 100 grams

  • Chicken for dusting

  • Egg 1

  • Chicken breasts 2

  • Onion 3 medium

  • Mushrooms 4-6

  • Garlic 3-4 cloves

  • Olive oil 6 tablespoons

  • Salt to taste

  • Red chilli flakes 1/3 teaspoon

  • Fresh cream 1 cup

  • Processed cheese grated 1/2 cup

  • Mixed herbs 1/2 teaspoon

  • Parmesan cheese 1/4 cup

Method

Step 1

Clean, wash and cut chicken breasts into half inch sized cubes. Peel, wash and chop onions. Clean, wash and chop mushrooms. Peel, wash and chop garlic. Beat egg. Roll out the dough into a thin square sheet. Dust out the excess flour.

Step 2

Heat two tablespoons of olive oil in a pan and add chicken pieces and sauté till the chicken is cooked. Apply the beaten egg on the rolled out dough.

Step 3

Heat two tablespoons of olive oil in another pan, add one chopped onion, mushrooms, garlic, chicken cubes, salt and one teaspoon red chilli flakes. Sauté till dry. Place a teaspoonful of stuffing at regular intervals on one half of the dough sheet. Fold o

Step 4

Cut around the stuffing, using a cutter, into round, square or rectangular shapes taking care that the ravioli is sealed from all sides. Roll out the remaining dough again and repeat the process.

Step 5

Boil sufficient water in a big pan and put in the raviolis. Cook for five to six minutes. Drain away the water.

Step 6

For the sauce, heat remaining olive oil in a pan. Add chopped onions and sauté till transluscent. Add red chilli flakes, fresh cream, grated cheese and salt. Stir and add the cooked ravioli. Mix again.

Step 7

Sprinkle mixed herbs, Parmesan cheese and red chilli flakes and serve immediately.
