Burnt Garlic Squids

Ingredients list for Burnt Garlic Squids

  • 4-5 Squids cut into rings
  • 2 tablespoons Garlic chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 teaspoons Vinegar
  • 1-2 Fresh red chillies finely chopped
  • 2 tablespoons Light soy sauce
  • + to deep fry Oil 1 tablespoon
  • 1 Egg
  • 3 tablespoons Cornflour/ corn starch
  • 3-4 Spring onion bulbs finely chopped
  • 1 stalk Spring onion greens finely chopped
  • 3-4 Garlic cloves sliced and fried

Method

  1. Take squids in a bowl, add salt, crushed peppercorns, 1 teaspoon vinegar, red chillies and 1 tablespoon soy sauce in a bowl and mix well. Set aside for 15 minutes.
  2. Heat sufficient oil in a pan.
  3. Break egg in a bowl and whisk well. Add ½ of it to the squid mixture and mix. Add cornflour and mix well.
  4. Deep-fry the squid rings in hot oil till golden and crisp. Drain on absorbent paper.
  5. Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic and sauté till golden. Add spring onion bulbs and sauté for a minute.
  6. Add fried squids and mix. Add remaining soy sauce, crushed peppercorns, coriander leaves and spring onion greens and mix. Add remaining vinegar and mix well.
  7. Serve hot garnished with fried sliced garlic.
