You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Bhurji Pav Recipe

  • Eggs beaten 6

  • Pavs 8

  • Oil 2-3 tablespoons + 1 teaspoon

  • Onions chopped 2 medium

  • Tomatoes chopped 2 medium

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Turmeric powder ¼ teaspoon

  • Green chillies chopped 2

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Heat oil in a non-stick pan, add onions and sauté till golden.

Step 2

Add tomatoes and salt and cook till oil separates.

Step 3

Add red chilli powder, turmeric powder and green chillies. Mix well and add whisked eggs. Mix well and cook, stirring continuously, till eggs are fully scrambled.

Step 4

Add coriander leaves, mix well and transfer on a serving plate.

Step 5

Heat 1 teaspoon oil in the same pan. Slit pavs horizontally in half and fry for ½ minute, pressing down on pavs 2-3 times, till crisp and light brown.

Step 6

Serve pavs with bhurji.
