Ingredients list for Bhindi Masala

  • 500 grams Ladyfingers heads trimmed and slit
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 2 Medium onions sliced
  • 2-3 Green chillies slit
  • 1 1/2 teaspoons Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • to taste Salt
  • 1 teaspoon Dried mango powder (amchur)
  • 1 tablespoon Fresh coriander leaves chopped
  • to garnish Fresh coriander sprig

Method

  1. Heat oil in a non-stick pan, add cumin seeds and sauté till the seeds chance colour.
  2. Add onions, mix and sauté till translucent. Add green chillies, mix and sauté for 2-3 minutes.
  3. Add ladyfingers, mix and saute for 3-4 minutes. Add red chilli powder, turmeric powder, coriander powder and salt and mix well. Cook till the ladyfingers are done.
  4. Add dried mango powder and coriander leaves and mix gently.
  5. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
