Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bhindi Masala Recipe

  • Ladyfingers heads trimmed and slit 500 grams

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Medium onions sliced 2

  • Green chillies slit 2-3

  • Red chilli powder 1 1/2 teaspoons

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 2 teaspoons

  • Salt to taste

  • Dried mango powder (amchur) 1 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Fresh coriander sprig to garnish

Method

Step 1

Heat oil in a non-stick pan, add cumin seeds and sauté till the seeds chance colour.

Step 2

Add onions, mix and sauté till translucent. Add green chillies, mix and sauté for 2-3 minutes.

Step 3

Add ladyfingers, mix and saute for 3-4 minutes. Add red chilli powder, turmeric powder, coriander powder and salt and mix well. Cook till the ladyfingers are done.

Step 4

Add dried mango powder and coriander leaves and mix gently.

Step 5

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
