Ingredients list for Asian Prawn Curry

  • 20 Prawns shelled and deveined
  • 2 inches Lemongrass
  • 2 tablespoons Oil
  • 1/2 teaspoon Mustard seeds
  • 15-20 Curry leaves
  • 1 medium Onion sliced
  • 4-5 Birds eye chillies diagonally sliced
  • 1/2 inch piece Ginger chopped
  • 1 medium Tomato chopped
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1 cup Thick Coconut Milk

Method

  1. Crush the lemon grass stalks and then chop them finely.
  2. Heat the oil in a non stick pan, add the mustard seeds, curry leaves, onion, bird’s eye chillies and ginger and sauté till fragrant.
  3. Add the prawns and sauté for two to three minutes. Add the tomato and stir to mix.
  4. Add the lemon grass, salt, turmeric powder and coconut milk. Cook till the prawns are just done. Serve hot.
